These air fryer fingerling potatoes are crispy on the outside, soft and creamy on the inside, and packed with tons of flavor. They're a perfect side dish for almost any meal and they're ready in just 20 minutes!

What are Fingerling Potatoes

If you're not familiar with fingerling potatoes, they're small, oblong-shaped potatoes with thin skin and a soft texture. They come in a few different colors and are most often sold in small 24-ounce bags with a mixture of colors.

Fingerling potatoes are perfect for roasting because they get super crispy on the outside and have a soft, creamy interior with a buttery flavor.

Why this Recipe Works

These air-fried fingerling potatoes are one of my go-to side dishes for weeknight dinners. Cooking them in the air fryer is quicker than traditional oven roasting, and the hot circulating air gets them extra crispy.

The delicious garlic and herb flavor of these roasted potatoes goes with just about anything, and best of all, they cook in under 20 minutes!

Ingredient Notes

  • Fingerling Potatoes - I used a mixed variety of fingerling potatoes, but this recipe will also work with baby gold potatoes or most other varieties if you prefer. I don't recommend waxy red potatoes for this recipe.
  • Olive Oil - I use mild olive oil because it has a higher smoke point than extra virgin olive oil, so it won't burn in the air fryer. Feel free to swap in your favorite cooking oil as long as it's suitable for high heat.
  • Seasonings - I prefer to use garlic powder instead of fresh garlic for these roasted potatoes because fresh garlic will burn in the high heat. I also season the potatoes with dried thyme for a savory flavor. Dried rosemary or Italian seasoning are also good options. A dusting of fresh chopped parsley after cooking adds additional flavor and a pop of color.

Step-by-Step Instructions

  1. Preheat your air fryer to 390℉.
  2. Prepare the Potatoes - Rinse and dry the potatoes, then slice them in half lengthwise. Place them in a large mixing bowl and toss with the olive oil. Sprinkle the seasonings over the potatoes and toss until evenly coated.

  1. Cook the Potatoes - Place the potatoes in the air fryer basket and cook for 18 minutes. Shake the basket every 4-5 minutes to redistribute the potatoes so they cook evenly.

Expert Tips

  • Don't skip cutting the potatoes. The cut side gets super crispy and it's what makes these so tasty!
  • Don't overcrowd the air fryer basket. It's okay for the potatoes to touch, but there should be room for the air to circulate. I use the 5.5 Qt Ninja Foodi XL air fryer, and one 24-ounce bag fits perfectly. If you need to scale up the recipe I recommend cooking in batches.
  • Be sure to shake the potatoes a few times during the cooking process or gently stir them around in the basket to redistribute them. This will help them cook more evenly and ensure they all get nice and crispy.

What to Serve with Air-Fried Fingerling Potatoes

These crispy roasted fingerling potatoes are seasoned with garlic and herbs, so they're loaded with savory flavor. They're perfect for an easy weeknight dinner with my pan-fried boneless pork chops. They're also a good choice for an easy side dish at your next Christmas dinner with roasted meats like my bottom round roast beef.

Storage and Reheating

Store leftovers in an airtight container and refrigerate for up to 5 days. The roasted potatoes can also be frozen for up to 6 months. If freezing, thaw the potatoes overnight in the refrigerator before reheating.

Reheat leftovers in your air fryer at 350°F for around 5 minutes or until warmed through.

Frequently Asked Questions

Can I make these fingerling potatoes without an air fryer?

If you don't have an air fryer you can roast the potatoes on a sheet pan in the oven. Check out my herb-roasted potatoes recipe for all the details!

Can I use other types of potatoes in this recipe?

Most small potatoes will work in this recipe. I do not recommend using waxy red potatoes because they will not have the same texture.

  • 1 Tablespoon olive oil
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • 1 tablespoon fresh chopped parsley, for garnish
