These air fryer fingerling potatoes are crispy on the outside, soft and creamy on the inside, and packed with tons of flavor. They're a perfect side dish for almost any meal and they're ready in just 20 minutes!
Rinse and dry the potatoes, then slice them in half, lengthwise. Place them in a large mixing bowl and toss with the olive oil. Sprinkle the seasonings over the potatoes and toss until evenly coated.
Place the potatoes in the air fryer basket and cook for 18 minutes. Shake the basket every 4-5 minutes to redistribute the potatoes. Garnish with chopped parsley and serve hot.

Storage and ReheatingStore leftovers in an airtight container and refrigerate for up to 5 days. The roasted potatoes can also be frozen for up to 6 months. If freezing, thaw the potatoes overnight in the refrigerator before reheating.Reheat leftovers in your air fryer for around 5 minutes or until warmed through. They can also be reheated in the microwave but will not be as crispy.
