Red White and Blue Popsicles

These festive red, white, and blue popsicles are made with fresh berries and coconut milk and make the perfect patriotic dessert for summer!

Why this recipe works

Red, white, and blue popsicles are a summertime classic. You may know them as bomb pops or rocket pops but this healthier homemade version is made with fresh berries and coconut milk for a sweet treat you can feel good about!

What you'll need

The ingredient list is short for these homemade popsicles. Just fresh strawberries, blueberries, coconut milk, and sugar.

You can use raspberries in place of strawberries if you prefer. You can also substitute agave syrup, honey, or other sweeteners for the sugar.

If you want a color boost for the red and blue you can also add a few drops of food coloring.

Step-by-Step Instructions

  1. Combine the coconut milk and sugar (or alternative sweetener) in a blender and mix on medium speed for 15-20 seconds. Then divide into three equal parts, around ¾ cup each.

  • Blueberries being blended with coconut milk.
  1. Return 1 part of the coconut mixture to the blender along with the strawberries and blend until smooth. If you want a deeper red, add a few drops red food coloring and blend until combined. Pour into a measuring cup and rinse the blender container.
  2. Repeat with the blueberries (and blue food coloring if desired).
  3. Pour the red mixture into the popsicle molds, filling each around ⅓ full. Freeze for 30-45 minutes until firm. Place the other two parts in the refrigerator until ready to use.

  1. Pour in the white mixture and freeze for 30-45 minutes until firm, then pour in the blue mixture. Add the popsicle sticks and freeze for 6 hours or until frozen solid then remove from the mold and serve.

Tips and FAQs

My liquids taste too sweet.

Freezing mutes the sweetness of the liquid mixtures so you want them to be a little on the sweet side when they are unfrozen.

My blueberry layer is too purple!

It's easy to go overboard with the blueberries and end up with a purple color. You have two options, you can add more blueberries and blue food coloring until you get a deep dark color, or you can add in more coconut milk or plain greek yogurt to lighten the color.

How to remove popsicles from the mold

Run warm water over the outside of the mold for 15-20 seconds to help loosen the popsicles from the mold. They should slide right out.

How to store popsicles

If you don't want to serve them all right away you can individually wrap the frozen popsicles in plastic wrap and put them in a large resealable freezer bag to store.
