This easy Cucumber Mocktail is a refreshing blend of sweetened cucumber and lime juices with club soda. It's perfect for a refreshing summertime drink and a great option for a non-alcoholic mocktail for dry January.

Why This Recipe Works

I love this drink in the winter when the cold, dreary weather has me craving a taste of summer. It's also a perfect thirst quencher for a hot sunny day spent poolside!

This simple cucumber lime mocktail is a refreshing, fizzy drink that is quick and easy to make with just a few ingredients. But this tasty drink is full of fresh, tangy flavor.

Ingredient Notes

A cucumber, a lime, a can of club soda, and a small ramekin of simple syrup set on a countertop/
  • Cucumber - English cucumber works best in this drink.
  • Lime - Use fresh lime for the best flavor.
  • Simple Syrup - You can use store-bought simple syrup or make your own at home. See the tips below for details on making homemade simple syrup.
  • Club Soda - Most carbonated cocktail mixers will work in this recipe. You can use tonic water, club soda, ginger beer, or whatever you prefer. If using another type, I recommend mixing it without the sweetener and then sweetening the drink to taste.

Step-by-Step Instructions

  1. Peel the cucumber and cut it into chunks. I leave a little bit of the skin for more color.

  1. Place the cucumber and lime juice in a blender and blend until smooth.
  2. Add the cucumber-lime juice and simple syrup to a glass filled with ice, then top with the club soda and gently stir to combine. Garnish with cucumber and lime slices, and serve.

Expert Tips

  • If you don't want to blend the cucumber, you can muddle the cucumber chunks and lime juice in a glass and strain the juice in a fine mesh strainer.
  • Alternatively, you can grate the cucumber on a box grater, then place it into a mesh strainer set over a bowl and press with a spoon to drain the juices. This provides a clearer juice.
  • To make homemade simple syrup, add equal parts water and sugar to a small pot set over medium-high heat. Bring the mixture to a simmer and stir until the sugar is dissolved. Let the syrup cool before using. The simple syrup can be stored in the refrigerator for up to one month.

How to Garnish a Cucumber Mocktail

There are tons of ways to garnish this cucumber lime spritzer. Here are a few of my favorites:

  • Thinly sliced rounds of cucumber and lime hint at the flavors of the drink and are a simple option.
  • Use a vegetable peeler to cut a thin, lengthwise slice of cucumber and wrap it around the inside of the glass. Or you can fold it back and forth and use a cocktail pick to skewer it.
  • A sprig of mint is another great garnish for this drink and adds some additional flavor.

Make Ahead

If you want to make this drink ahead, blend the lime juice and cucumber, then transfer to a storage container and refrigerate for up to 2-3 days. When ready to serve, pour over ice. Top with the club soda and gently stir to combine.

Variations

  • Try adding ginger beer instead of club soda to add a little spicy kick.
  • Muddled mint leaves are a great flavor addition.
  • Gin or Vodka are perfect choices to turn this into a cocktail.

Ingredients

  • ½ oz lime juice
  • ½ oz simple syrup
  • 1 cup chopped English cucumber
  • club soda, to top of the drink

Instructions

  • Peel the cucumber and roughly chop into chunks.
  • Place the cucumber and lime juice in a blender and blend until smooth.
