Step-by-Step Instructions

  1. Boil the lima beans: Bring a small pot of water to a boil. Add the lima beans and cook for 6-7 minutes.
  2. Sauté the onion and peppers: While the beans cook, heat a large skillet over medium heat and add the olive oil. Cook the diced onion and bell peppers until softened, about 5 minutes.

  1. Add the beans, corn, and okra: Drain the lima beans, then add them to the pan along with the corn, okra, and garlic. Cook for another 5 minutes, stirring occasionally.
  2. Add tomatoes and seasoning: Stir in the tomatoes, butter, salt, and pepper, and cook for an additional 2-3 minutes, or until the tomatoes are softened, then serve warm.

Ingredients

  • 2 cups frozen baby lima beans
  • 1 cup diced onion
  • 1 cup diced bell peppers
  • 1 Tablespoon olive oil
  • 3 cups corn kernels, 3-4 ears of fresh corn
  • 1 cup sliced okra
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions
