Add the chicken to a mixing bowl and sprinkle the flour, Italian seasoning, salt, and pepper on top, then toss until the chicken is coated.
Heat a 12-inch cast iron skillet over medium heat. Add the olive oil and 1 Tablespoon of butter. When the butter has melted, add the chicken in a single layer and cook for 3-4 minutes, until well browned. Then flip and cook for another 2-3 minutes, until the chicken is cooked through.
Reduce the heat to low. Add the remaining 2 Tablespoons of butter, garlic, and parsley, then cook for another minute, stirring occasionally. Ensure the chicken is cooked to an internal temperature of 165℉, then serve immediately.

Pat the chicken with paper towels to dry before tossing them with the flour and seasonings to help them brown.
Cook the garlic chicken bites in a single layer, and do not distrub them for 3-4 minutes so they get a good golden brown sear. This adds tons of flavor and helps avoid steaming the chicken.
