Greek Chicken Meatballs

1 pound ground chicken ½ cup plain breadcrumbs 1 large egg 1 tablespoon olive oil ¼ cup red onion, finely diced ⅓ cup crumbled feta cheese 2 cloves garlic, minced 2 teaspoons fresh dill, chopped 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon ground cumin 1 teaspoon kosher salt ½ teaspoon freshly ground black pepper

MAke the meatball mix

Add all of the ingredients to a large mixing bowl and mix together until well combined.

Avoid overworking the meat mixture, which will result in a denser meatball.

Form The Meatballs

Use a small cookie scoop to scoop the meatballs onto the prepared sheet pan. Wet your hands and roll the meatballs to shape them into round balls.

Brown the Mushrooms

Bake at 400°F for 12-15 minutes until the internal temperature reaches 165°F. Alternatively, you can cook the meatballs in a hot skillet until cooked through.
