Chicken Enchiladas 

Green Sauce

with

1 medium onion, diced 2 cloves garlic, minced 3 cups cooked shredded chicken ¾ cup sour cream 4 oz can diced green chiles 1½ cups shredded cheese 15 oz can green enchilada sauce 8 6" tortillas, flour or corn 2 Tablespoons chopped cilantro

Preheat oven to 375°F. Sauté onion and garlic then turn off heat and add ¼ cup of the enchilada sauce, can of diced green chiles, shredded chicken, ½ cup of cheese, and sour cream to the pan and stir to combine.

Set up an assembly line with the filling, tortillas, and baking dish. Add a thin layer of the green sauce to the baking dish. Fill each tortilla with ⅓ cup of the chicken mixture, then roll the tortilla and place in the baking dish with the seam-side down.

Pour the remaining enchilada sauce over top of the enchiladas. Top with the remaining cheese and bake for 20 minutes, until the cheese is melted and the sauce is bubbling.
