Beef Tenderloin Tips

with Mushroom Gravy

Beef Tips 1 pound beef tenderloin tips 1 teaspoon Kosher salt ½ teaspoon ground black pepper 1 Tablespoon olive oil Mushroom Gravy 2 Tablespoons butter ½ cup sliced onion 8 ounces sliced mushrooms 2 garlic cloves minced 1 ½ cups beef broth 2 teaspoons Worcestershire sauce 1 teaspoon dried thyme 1 Tablespoon cornstarch salt and pepper to taste

Season the beef with salt and pepper and sear in a large skillet until the meat is well browned on all sides, around 3 minutes. Then transfer meat to a plate.

Saute mushrooms and onions in the same skillet for 6-7 minutes until browned. Add garlic and cook for 45 seconds.

Add beef stock, Worcestershire, thyme and bring to a simmer. Whisk in the cornstarch slurry and cook for 1-2 min until thickened

Add the beef tips back to the pan and cook for another 2 min, then season with salt and pepper to taste. Garnish with chopped parsley and serve.
