3medium golden beetscooked, peeled, and cut into wedges
1cupradishesthinly sliced
1cup heirloom cherry tomatoes
1cup sugar snap peas
1cupenglish cucumbersliced
4-5cupsspring mix blendsuch as baby kale or baby romaine
chopped herbs for topping, optional
Dressing
1medium avocadoseeded and peeled
1cupchopped herbssuch as dill, chives, tarragon, and parsley
½cupbuttermilk
1 Tablespoonlemon juicefresh squeezed
1medium clovegarlic
½teaspoonsalt
Instructions
Salad
Add half of the spring mix then top with half of the vegetables. Add the remaining salad mix then the remaining vegetables. Top with the salad dressing and chopped herbs then serve.
Dressing
Add all of the salad ingredients to a food processor and puree until smooth, around 20 to 30 seconds. If the dressing is too thick, add additional buttermilk or lemon juice 1 tablespoon at a time and pulse until you reach your desired consistency.
