Watermelon Salad

with Basil and Mint

Salad 6 cups seedless watermelon cubes ½ cup crumbled feta cheese ¼ cup thinly sliced red onion ¼ cup fresh chopped basil 1 Tbsp fresh chopped mint salt and pepper, to taste Honey Vinaigrette ¼ cup olive oil 2 Tbsp champagne vinegar 1 Tbsp honey 1 tsp dijon mustard ½ tsp salt ¼ tsp ground black pepper

Prepare the Dressing

Combine olive oil, champagne vinegar, honey, dijon mustard, salt, and pepper in a small bowl and whisk together until well blended.

Prepare the Salad

Add the watermelon, feta, onion, basil, and mint to a large mixing bowl. Pour the dressing on top, then fold or gently toss to coat the salad.

Serve and Enjoy

Let the salad sit for 5-10 minutes to allow the watermelon to release some of its juices, then transfer the salad into a large serving bowl and discard the juices.
