Teriyaki Chicken Bowl

1 cup rice 1¾ cup water 1 medium green pepper 1 medium red pepper 3 teaspoons cooking oil 1½ pounds chicken breast 3 cups broccoli florets 1 teaspoon sesame seeds 1 Tablespoon chopped green onion Teriyaki Sauce ⅓ cup low sodium soy sauce 1 teaspoon sesame oil 1 Tablespoon rice vinegar 1 teaspoon ginger 2 cloves garlic ¼ cup brown sugar 1 teaspoon cornstarch

Cook the Rice

Bring 1¾ cups of water to a boil in a small saucepan, then stir in the rice. Cover and bring to a simmer. Cook for around 20 minutes until the water has been absorbed and the rice is softened.

Cook the Peppers

Heat a large skillet over medium-high heat. Add 2 teaspoons of oil and the chopped bell peppers. Cook for around 2 minutes until softened, then remove to a plate.

Cook the Chicken

In the same pan, add another teaspoon of oil and reduce the heat to medium. Season the chicken with pepper, then add to the pan and cook for 5-6 minutes, flipping occasionally, until golden brown and cooked through.

Prepare the Sauce

While the chicken cooks, prepare the teriyaki sauce by whisking together the sauce ingredients in a small bowl.

Cook the Broccoli

Rinse the broccoli, then place it in a microwave-safe container with a tablespoon of water. Cover it loosely and cook in the microwave for 4 -5 minutes.

Cook the Sauce

When the chicken is just cooked through, stir the sauce again, then add it to the pan. Cook for 1-2 minutes, stirring frequently, until the sauce has thickened. Garnish with sesame seeds and chopped green onion.
