1¼ pounds chicken breast 1 Tablespoon olive oil 1 cup diced yellow onion ½ cup diced green pepper 2 cloves garlic finely minced 2 15 oz cans white beans 2 teaspoons ground cumin ½ teaspoon chili powder ½ teaspoon dried oregano ½ teaspoon salt ¼ teaspoon ground black pepper 4 cups low sodium chicken stock 4 oz cream cheese 1 Tablespoon chopped cilantro

Set Instant Pot to saute and cook onion and pepper for 4-5 min until soft. Turn off pot and add beans, stock and seasonings.

Season the chicken and place on top of the beans. Cook on high pressure for 8 min and allow a 10 min natural release.

Remove chicken and shred then return to pot. Add cream cheese and stir until melted and combined.
