Herb Roasted Half Turkey Breast

Ingredients

3 pound split turkey breast

6 Tbsp unsalted butter

1 Tbsp fresh parsley, chopped

2 tsp fresh thyme, chopped

2 tsp fresh rosemary, chopped

2 tsp Kosher salt

1 tsp ground black pepper

1 tsp poultry seasoning

Time: 1 hr 15 min

Serves: 4-5

Combine softened butter, chopped herbs, 1 tsp salt, and ½ teaspoon pepper in a small bowl and stir to combine

Rub the butter mixture under and on top of the turkey skin then sprinkle with poultry seasoning. Season the underside with salt and pepper

Bake at 425°F for 20 min. Then reduce heat to 350°F and cook until internal temp reaches 160°F. Remove and let rest for 15 min before carving.

Carve the turkey from the bone then slice into thin slices along the length of the turkey breast.
