Baked Salmon 

with Lemon

2 pounds salmon 2 medium lemons 2 tbsp olive oil 3 cloves garlic, minced 1 tsp kosher salt 3 tbsp fresh chopped dill fresh ground pepper

Preheat oven to 375°F. Line a sheet pan with foil and coat lightly with cooking spray then add the salmon.

Drizzle olive oil over the salmon. Season with garlic, salt and pepper and half of the fresh dill. Place thin slices of lemon on top of the salmon.

Fold the foil up and around the salmon and fold the sides together to seal. Fold up the ends to form a large pouch. Bake for 15 minutes.

Remove from oven and set oven to broil. Open the pouch and move the lemons to the side. Return the salmon to the oven and broil for around 3 minutes until browned.

This flavorful salmon dish only takes a few minutes to put together, and about 20 minutes to bake, so it's perfect for busy weeknights!
