Creamy Chicken Florentine

Ingredients

1½ pounds chicken breasts

2 Tbsp Olive Oil

1 tsp Italian seasoning

¼ tsp fresh ground pepper

½ tsp kosher salt

½ cup all-purpose flour

3 tbsp butter

½ cup onion, diced

3 cloves garlic, minced

1 pint heavy whipping cream

1 cup grated Parmesan cheese

3 cups fresh spinach

Season with Italian seasoning, salt, and pepper, then dust with the flour to coat on both sides and shake off any excess.

Heat 2 tbsp of olive oil over medium heat. Cook the chicken for 3 to 4 minutes per side until golden brown and cooked through, then transfer to a plate and set aside.

Melt butter in the pan then saute the onion for 3-4 minutes. Add the garlic and cook for another 30 seconds. Add cream and bring to a simmer then stir in cheese.

Add the spinach and cook for another 1-2 minutes until the spinach has wilted and the sauce is thickened.

Add the chicken back to the pan and cook for another 1-2 minutes until the chicken is warmed again, then serve.
