CHICKEN AND RICE CASSEROLE
with NO soup!
– 1 pound cooked chicken – 2 cups cooked rice – 2 cups broccoli florets – 4 Tablespoons butter – 1 cup onion, diced – 2 cloves garlic, minced – ¼ cup flour – 1 teaspoon salt – ½ teaspoon fresh ground black pepper – 1½ cups low sodium chicken broth – 1 cup milk – 1½ cups shredded cheddar cheese – 12-16 Ritz crackers, crushed
Ingredients
1. Cook chicken, then dice and set aside
2. Prepare the creamy sauce
3) Add the chicken, rice, broccoli, and cheese to the sauce and stir to combine.
4)Add to a baking dish and top with crushed crackers.
5) Bake at 350°F for 20 to 25 minutes until bubbly and lightly browned. Let cool for 5-10 minutes then serve!
